But don’t let its name (or its flavor) fool you: Allspice is actually the pea-sized berry of an evergreen tree, native to the Caribbean and Central America.

I use allspice to make sauerbrauten as well as season cookies and baked apples. This is the whole form which stays fresh forever. To use, crack the kernels with a heavy can or rolling pin. I make a syrup from allspice and cinnamon to flavor hot and iced tea.
