I expected it to have the texture of diced ham....it's cooked, and canned in water, the "dices" are little cubes (the cans are like small Tuna cans) and I was surprised when I ate some. It tastes a bit more like Vienna sausage meat, HOWEVER, after draining the water from the can, and rinsing it ...

I absolutely love this product. It is so versatile that I use it to fortify recipes and also prepared foods, i.e., canned and frozen. Great substitute for canned tuna or chicken for a different flavor experience.
