A must for anyone with imagination in the kitchen. It helps you to know how to cook almost any ingredient. I probably could use an updated version because it is lacking some of the newer fruits and vegetables, but that is what the internet is for. This is full of historical information as well.

Comprehensive coverage of French cuisine; obviously weaker elsewhere. Recipes are notoriously unreliable. Nice pictures.
