This makes a fantastic lemon chicken and rice soup base! Adding rotisserie chicken, the juice from a freshly squeezed lemon, 2 cups riced cauliflower (which absorbs the lemony flavor and does taste like rice), and a handful of chopped baby spinach, makes this a yummy, filling, low calorie soup!

I couldn't believe how delicious this soup was...I only had half and half in the fridge so I substituted that for the milk but added more water. Added rotisserie chicken to the pot and voila - great soup...nice and thick. Highly recommend!

I've had this soup at a Greek restaurant and it wasn't any where near as good as this soup. My first time making it and was easy and tasted great. I added about 2lbs of shredded chicken rather than the recommend 1.5 suggested. I had my chicken breasts in my crock on low for about 6 hours and seas...

I had never heard of Lemon Avgolemono soup before. But after trying it, our family has decided it is our favorite!! I add butter, lemon, and chicken and it is fabulous!! I highly recommend trying it - would love it even better if they would carry it in the store all the time!

My whole family loves this soup! It's thick and creamy and very easy to make. We always add extra lemon juice because we like it really tangy. We also add Walmart canned chicken breast to make it a meal. It's quite hard to find in stores and I'm so happy I found it here!
