Not only does it make a Bavarian, but I use it as the base for Wit Bier too. I change the yeast and add Bitter Orange and Coriander for flavor. This time I used T-58 yeast. It tasted good at bottling and I have one in the fridge ready to taste today.

I drank this in a side-by-side, blind, taste test Weihenstephaner Hefe Weissbier, Beer Advocate's #18 Top Beer on Planet Earth. Honestly it was easy to tell them apart just at a glance, defeating the blind part. But both were really good and comparable in flavor.
