Alton brown suggested a high carbon steel pan so I bought one. Had the 8 inch for six months and decided I had to get the bigger one. So far it is everything they say. Fast even cooking, non stick keeps getting more non sticky, and fast easy cleaning.

I bought the 8" model and I liked it so much that I bought the 10" size. It well be my go-to cornbread pan.
